Ingredients:
Olive Oil
1 onion, finely diced
1 chilli, finely diced
2 garlic cloves, finely diced
1 tsp of smoked paprika
4 pork sausages, decased
1 tin of plum tomatoes
Basil, chopped finely

Method:
- In a pot, heat the olive oil. Add the onion and cook over moderate heat, stirring occasionally, until the onion is softened.
- Add the garlic and chilli to the pan, frying until soft and fragrant.
- Add 1 tsp of smoked paprika to the pan, fry for 1 minute.
- Pour plum tomatoes into a bowl, squeezing with your hands to break the tomatoes into small pieces.
- Add the tomato mixture to the pan, cooking on a low heat and stirring occasionally.
- In a separate pan, add the sausages, breaking up with a wooden spoon into small pieces. Fry until browned. Once browned, take off the heat.
- Add the sausages to the tomato mixture and let simmer for 5 minutes.
- Stir through chopped basil into tomato mixture. Season with salt and pepper to taste.
- In the meantime, cook your pasta in generously salted pasta water, to the time demonstrated on the pack.
- Once your pasta is cooked, add it to the pasta sauce, along with some pasta water.
- Serve the pasta, topped with a generous helping of Parmesan and chopped basil.
