Spicy Sausage Arrabiata Radiatori

Ingredients:  

Olive Oil

1 onion, finely diced

1 chilli, finely diced 

2 garlic cloves, finely diced 

1 tsp of smoked paprika

4 pork sausages, decased 

1 tin of plum tomatoes

Basil, chopped finely

Method:

  1. In a pot, heat the olive oil. Add the onion and cook over moderate heat, stirring occasionally, until the onion is softened.
  2. Add the garlic and chilli to the pan, frying until soft and fragrant.
  3. Add 1 tsp of smoked paprika to the pan, fry for 1 minute. 
  4. Pour plum tomatoes into a bowl, squeezing with your hands to break the tomatoes into small pieces.
  5. Add the tomato mixture to the pan, cooking on a low heat and stirring occasionally. 
  6. In a separate pan, add the sausages, breaking up with a wooden spoon into small pieces. Fry until browned. Once browned, take off the heat. 
  7. Add the sausages to the tomato mixture and let simmer for 5 minutes.
  8. Stir through chopped basil into tomato mixture. Season with salt and pepper to taste.
  9. In the meantime, cook your pasta in generously salted pasta water, to the time demonstrated on the pack. 
  10. Once your pasta is cooked, add it to the pasta sauce, along with some pasta water. 
  11. Serve the pasta, topped with a generous helping of Parmesan and chopped basil.
